Many people despise their walnut trees because of the walnuts that drop into their yards. But what if I tell you you can use them in a traditional Italian liqueur made from green walnuts! This earthy, spiced drink is not only flavorful but also a fantastic way to celebrate the bounty of walnut trees. Here’s how you can make nocino at home and enjoy this unique creation.

What is Nocino?

Nocino is a dark, aromatic liqueur from northern Italy. Made from unripe green walnuts, it has a complex flavor profile that combines nutty, sweet, and spicy notes. The Role of Walnut Trees in Nocino

The black walnut tree (Juglans nigra) is very common in east-central and northeast Kansas. It is perfect for making nocino. The unripe nuts should be harvested in late spring to early summer, typically in June. The key is to pick the nuts when they are still soft and green before the shell inside has hardened (you will need to be able to cut it with a knife).

How to Make Nocino at Home

Making nocino is surprisingly straightforward and requires just a few ingredients. Follow these steps to create your own batch:

Ingredients

  • 25 green walnuts (harvested early, when soft and green)

  • 1 liter of vodka (or another neutral spirit)

  • 1 1/2 cups granulated sugar

  • 1 cinnamon stick

  • 5 whole cloves

  • Zest of 1 lemon

  • Sugar or simple syrup
  • Optional: Vanilla bean or star anise for additional flavor

Instructions

  1. Harvest the Walnuts: Using gloves to protect your hands from staining, carefully pick 25 green walnuts. Wash and pat them dry.
  2. Prepare the Walnuts: Cut each walnut in half. They’ll be slightly sticky and emit a strong, earthy aroma.
  3. Combine Ingredients: Place the quartered walnuts, cinnamon stick, cloves, lemon zest, and optional spices into a large glass jar with a tight-fitting lid. Pour the vodka over the mixture, ensuring all ingredients are fully submerged. Note: I used Everclear and cut it with distilled water after I strained the mixture.
  4. Infuse: Seal the jar and store it in a cool, dark place for 6-8 weeks. Gently shake the jar every few days to mix the flavors (if you don’t mix it, it will still be ok).
  5. Sweeten the Liqueur: After the infusion period, strain the mixture through a fine-mesh sieve or cheesecloth to remove solids. Stir in the sugar or sugar (to taste) until it dissolves completely.
  6. Age the Nocino: Transfer the sweetened liqueur to clean bottles and let it age for at least 1-3 months, but ideally, this is a 6-month process. The flavors will deepen and mellow over time.
